Our Latest Obsessions

1. The new Drake CD of course!

We bought tickets to his concert in June and the big night was supposed to be October 6th. Well, the day before we found out that Drake postponed his tour.... so now we have to wait until December 7th. We were pretty bummed but now we get to be excited about it for even longer!

2. PHO

Our friends introduced us to this small Vietnamese restaurant in Kansas City and we love it! We both tried Pho for the first time and just can't get enough! Too bad it's not closer to us.

3. BOBA

Jared & I love peach smoothies and Jared tried Boba for the first time! It tastes like nothing really... but for some reason I love the idea of a chewy surprise while drinking a smoothie. Who knew?

4. PEOPLE WATCHING

This has probably become our favorite thing to do since we moved to Missouri. (probably because there isn't much else to do haha) But seriously. It is especially fun to go out to the night clubs and get our people watch on. HILARIOUS. There is never a dull moment and I don't think it will ever get old. So I would like to personally thank all of the crazy people out there who make fools of themselves and keep us entertained. Keep it up!

Crock Pot: Sausage & Cheese Tortellini

The crockpot has become my best friend since I started substitute teaching. I love cooking, but it is so nice to have some good recipes that I can throw in the crock pot on a busy day! This recipe is probably our favorite crock pot meal. It is SO easy.

Here are all of the ingredients. Mild sausage is good, but we started using spicy and love it!

Ingredients:

1 bag frozen cheese tortellini
2 cans Italian diced tomatoes
1 block cream cheese
1 carton chicken broth
1 small bag fresh spinach
Mushrooms (optional) I love them, but Jared does not haha
salt and garlic to taste ( I just added a tad)

Put all ingredients in crockpot (cut cream cheese up in cubes) and cook on low 5-6 hours. That's it!

It is delicious! Let me know what you guys think!

Chicken in a Basil Cream Sauce

I have been having a lot of fun trying out new recipes and cooking a lot more than I did in college. I really enjoy cooking now and I love trying new things. Sometimes it feels like I'm on Top Chef or something and Jared is one of the judges. It's a pretty good adrenaline rush (you know since I don't have swim meets for that anymore haha) I want to start posting a lot of the recipes that have passed Jared's test with flying colors! I will just share one of them for now. This one is one of my favorites!  This recipe is so yummy and super easy!

Ingredients:

1/2 cup milk
1/2 cup dried italian bread crumbs
4 boneless, skinless chicken breasts
3 tablespoons butter
1 clove garlic (1/2 teaspoon minced)
1/2 cup chicken broth
1 cup heavy whipping cream
1/4 cup sun dried tomatoes, chopped
1/4 cup chopped fresh basil
1/8 teaspoon black pepper

Instructions:

  1. Place milk and bread crumbs in separate mixing bowls. Make sure your chicken breasts are thin.
  2. In skillet, heat butter to medium heat. Dip chicken in milk, then coat with crumbs. Cook chicken in butter, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.
  3. Add the garlic to the pan and cook for 30 seconds over medium heat. Add the chicken broth to the skillet. Bring to a boil over medium-high heat, and stir. Stir in cream and sun-dried tomatoes; boil and stir for 1 minute. Reduce heat.
  4. Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. For thicker sauce, cook longer.
  5. Serve chicken with sauce poured over the top.

And here it is! I usually serve it with a salad and vegetables.

Enjoy!

Memphis, Tennessee

A few weeks ago, Jared and I went on another weekend road trip! We drove to Memphis to visit one of my closest friends from college. It was a 7 hour drive all the way through Arkansas. So the scenery was not the most beautiful thing I've ever seen... But Memphis was so fun! Michelle lives right in the middle of downtown where all the fun is happening. She took us to lots of yummy restaurants and we had so much fun getting out of town for the weekend to see a familiar face! I learned a lot about Memphis and some major events that happened there. We saw the hotel that Martin Luther King was killed.

and Sun Studio where Elvis recorded his music.

So we learned a little history, then we had lots of fun! Here are some pictures from our trip.

We went to the Memphis zoo.

Went on a run by the Mississippi River

Memphis night life!

We might live in the middle of nowhere here in Missouri, but we are not too far from a lot of major cities. Our goal is to take advantage of that over the next year or so and make as many road trips as we can to visit all the cool places we have never been too. I'm hoping Chicago is next!
